The coffee comes from a processing site called "Korommi" that is operated by Guji Highland Farm, a group who manage their own large semi-forest coffee farms around the Guji area, as well as processing sites where they process their farm coffee as well as coffee from outgrowers in the area. The particular coffee site that this coffee is from processes coffee from several of the small, surrounding kebele's, separating each process batch by village name. So in this case, it is all coffee from the single kebele Korommi. Other kebeles Guji Highland are buying from nearby including Dambi Uddo, Hangadhi, Daanisa, Hangadhi and more. For the natural process lots like this one, the coffee cherry is floated first to remove underripe coffee, then laid to dry on raised beds for 3 full weeks (give or take a few days depending on sun).
